Irish Potatoes

Today I went on a bike ride to a bunch of local breweries [link] led by my former roommate, Jesse. As we were riding around the city, we witnessed so many crowds of people decked out all in green shouting around the city. Obviously, St. Patrick’s day must have something to do with it. Then it got me thinking… maybe I should make Irish Potatoes!

Here’s the recipe I used:

1/4 c. (1/2 stick) butter, softened
4 oz. cream cheese, softened
1 tsp. vanilla extract
1 box (16 oz.) confectioners’ sugar
1 bag (7 oz.) (about 2 1/2 c.) flaked coconut
Ground cinnamon

Cream together the butter and cream cheese in a large bowl. Beat in the vanilla and confectioners’ sugar, then mix in the coconut. Roll mixture between hands to form walnut-sized balls. Roll balls in cinnamon and refrigerate until firm.

I like to add a pinch of cayenne pepper to the cinnamon to give it a little extra zing.

    Thanks. I was walking around today wanting Irish Potatoes but being too lazy to walk to the bakery near me that sells them. I’ll make them this week. Think I’ll roll some in cinnamon and dip some in dark chocolate.

    Ed drank pretty hard for beer week on Sunday but he is on call this weekend. We might follow your tour a different weekend (and on foot).

      yeah I was craving irish potatoes big time after I saw everyone out today in green. dark chocolate sounds like a good idea… i was actually thinking that as I was rolling them, “what would these be like rolled in cocoa powder too?” haha. the brewery tour was pretty fun, Yards and PBC gave out free samples of everything… i recommend it!

    yum! i’m making some this week for both of our office parties. at least that means there won’t be a stockpile in our house that would slowly and surely wind up in my tummy.
